oven barbeque chicken


brine:
4 quarts water
4 tbsp salt
1 tbsp dried thyme
2 sprigs rosemary
8 cloves garlic, peeled, whole
1/4 c brown sugar
1/4 c white sugar
3 half chickens

1 bottle of barbeque sauce

brine chickens for approximately 2 hours. preheat oven to 500°. remove chicken from brine and pat dry with paper towel. season with salt and pepper (not too heavy on the salt since it was brined). broil (yes, broil- the oven will be nice and toasty, and then switch it to broiler) for 5 minutes on each side. knock the oven back to 375° and bake chicken for 15 minutes. brush with barbeque sauce and bake for another 30 minutes. brush with sauce again and bake for another 15 minutes. let rest for about 10 minutes after removing from the oven.
