1 tbsp canola oil
4 c. beef broth
4 c. vegetable juice (like v8)
2 c. water
1 onion, diced
4 carrots, sliced or diced
3 potatoes
2 cloves garlic, minced or grated (i grate it and use about 5 cloves because i ♥ garlic)
1 can corn, drained
1 can peas, drained
2 cans french-cut green beans, drained
1 can diced or stewed tomatoes, undrained
2 bay leaves
dash of worcestershire sauce
salt and pepper to taste
heat canola oil in large pot. add meat, brown on all sides. add a dash of worcestershire and onions and garlic, saute until onions are translucent. add all liquids, then veggies. bring to boil, then reduce heat and simmer covered for 1 hour, stirring occasionally. delicious!
